I am trying to remember the name of a dish on Le Comptoir brasserie%26#39;s menu. It was similar to a roasted chicken, but called something that began with a %26quot;c.%26quot; My father is going to Paris end of next week, and I want to give him a recommendation, but I cannot remember the name of the dish, I keep thinking cassoleut(sp?), but I know that is wrong. Any help would be appreciated.
Thanks.

Is it capon?

Hi;
A common dish in brasseries is Confit de Canard which is a dish made with duck, slow cooked then cooled and stored in it%26#39;s own fat.
When served it can then be grilled and served along with some potatoes roasted in the duck fat, or with braised cabbage and apples...

Thank.
I think it is capon.

Could it be Cailles ?
Capon is served mostly around Xmas time and I have not seen it on many menus !!!
Menu at Comptoir changes all the time anyway. They have many specials.

It%26#39;s probably too late, but I suspect you were looking for Coquelot des Landes ... I had this dish and remember it fondly... m
